EASY Posole -slow cooker

If you have ever had posole or made it, you know it is good, but can be time consuming to make. I made this and had side dishes of toppings… cilantro, lime wedges, avocado,onion, warm tortillas… whatever your family likes… enjoy…

 

Slow Cooker Posole

1 tablespoon oil
2 lbs pork or beef (i tried half and half)
2 (4.5 ounces) of enchilada sauce
2 (15.5ounce)cans of white hominy, drained
1 onion, sliced or diced
1/2 cup green chiles diced
4 cloves minced garlic
1/2 teaspoon cayenne pepper or to taste
2 teaspoons dried oregano
1/4 cup cilantro, chopped
1/2 teaspoon salt

Heat oil in a skillet over high heat. Add meat and stir just until meat is
Browned on all sides, about 5 minutes.
Place meat in 4 quart slow cooker. Pour the enchilada
sauce over the meat. Top with hominy, onion, Chiles, garlic, cayenne pepper, and oregano. pour enough water to fill cooker.
(I have also used broth in lieu of the water, your Choice)
Cover and cook on high for 6 to 7 hours. Stir in cilantro and salt cook for 30 minutes more.

    With the winter months here and it being so cold (really cold in Colorado), what is better than Posole, stew, soup and easy crockpot cooking. Take time to spend with family. I also take whats left and freeze it! Enjoy with bread, tortillas whatever you like.
